Pineapple fried rice

  • 3.5 oz pineapple

  • 2.8 oz green bean

  • 2.8 oz carrot

  • 2 oz cashew

  • 2 stalks green onion

  • 3 cloves garlic

  • 2 eggs (skip for vegan recipe)

  • 1 tbsp sambal oelek

  • 3 tbsp cooking oil

  • 2 bowls cooked brown rice

  • Salt, pepper to taste

Steps

Prepare


  1. Dice pineapple

  2. Clean and dice green beans

  3. Crushed roasted cashews (for easier to blend with other ingredients while chewing, however you can omit if you want to keep the whole cashew)

  4. Thinly sliced green onions (separate the white and green part)

  5. Whipped eggs

  6. Minced garlic


Cooking


  1. Heat 1 tbsp cooking oil over medium-high heat, coat the pan evenly, pour in the beaten eggs and stir gently for 1 minute. Then remove to a plate to use later (egg does not need to be overcooked because it will continue to be cooked later)

  2. Heat a pan with 1 tbsp of cooking oil over medium heat, add aromatics to the pan and sprinkle a little salt on the side, stir-fry.

  3. When the pineapple has almost browned and turned golden brown, add the carrots and sauté for about 1 minute, then add the beans and stir fry for another 1-2 minutes on medium heat. (No need for very soft vegetables, because they will continue to roast later)

  4. Keep the pan on medium heat, add the garlic and white scallions and saute for about 1 minute, then add the cashews and stir well (if using raw cashews, you need to roast them more carefully).

  5. Put 2 bowls of rice in and roast them evenly with cashews for 5 minutes on medium heat (note because depending on the stove and type of pan you use, adjust the time accordingly). When the fried rice is a little astringent, the taste has disappeared with the onion and garlic, add 1 tablespoon of sambal oelek chili sauce (this amount is not very spicy, you can add more if you eat it spicy), stir-fry for 1 minute.

  6. Put the scrambled eggs back into the pan. Smash the egg into the pan and stir the rice in the pan until the rice is soft, then put the fried vegetables back into the pan.

  7. Try to see how the rice is, then add salt and pepper to taste. Stir well, then add the green onion and turn off the heat.

  8. Before serving, squeeze the green lemon evenly over the fried rice and mix well.


Note

  • Using a deep pan when roasting will taste better

  • Stir-fry, help push the sweetness of pineapple

  • How to make a pineapple bowl: base the thickness of the "bowl" wall for example 0.5cm, then put the knife tip around the meat, 0.5cm away from the peel. Pass the knife around the inside of the pineapple, until half a fruit is circled around. Take the knife to cut the vertical and horizontal lines of the chess piece, stop at the edge of the pineapple. Use a spoon to scrape the pineapple core, scrape out all the flesh, and the pineapple peel is a pineapple-shaped bowl
