Mushroom tikka masala

Ingredients

  • 13.5 oz white button mushrooms

  • 2 tbsp cooking oil

  • 1 onion

  • 3 cloves garlic

  • 1 thumb ginger

  • 4.5 oz white beans

  • 7 oz tomato sauce

  • 1/4 cup almond (or other nut) milk

  • salt to taste


1) Spices for marinating mushrooms

  • 1/2 cup unsweetened Greek yogurt

  • 1/2 tbsp minced ginger

  • 2 tbsp minced garlic

  • 1 tbsp garam masala powder

  • 1 tsp chili powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp cumin powder


2) Spices for cooking

  • 2 tbsp garam masala powder

  • 2 tsp cumin powder

  • 1 tsp turmeric powder

  • 1 tsp chili powder

  • 1/2 tsp coriander powder

  • 1/2 tsp sugar

Steps

Preparing

  1. Finely chop onion, mince garlic and ginger.

  2. Clean mushrooms, cut into bite-sized pieces (by a knife or by hand). Mix well with spices (1) and let marinate for 15 minutes.

  3. Mash white beans.


Cooking

  1. Heat 2 tbsp cooking oil on medium heat, add the marinated mushrooms to fry for about 5 minutes. Then add the chopped onion, 3 cloves minced garlic and 1 thumb minced ginger and stir well.

  2. Add all the spices (2), together with tomato sauce, 1 tbsp of chili powder, mashed white beans, and almond/nut milk.

  3. Mix well and bring to a boil. When boiling, reduce heat to low, simmer for about 20 minutes until mushrooms are soft. Add salt, season to taste.

  4. Ladle into a bowl. The dish is usually served with rice or naan (Indian bread), extremely delicious.
