Ingredients
1.8oz (50g) lentil
2.5oz (70g) kale
1.8oz (50g) carrot
9.1oz (230g) tomato
3.5oz (100g) onion
500ml vegetable broth + 200ml water
olive oil
Spices: garlic, thyme, cumin powder, curry powder, crushed dried chili, pepper, salt, 1tbsp lemon juice
Steps
Preparing
Wash the lentils with clean water.
Dice the carrot, tomato, onion.
Destem the kale and finely chopped the leaves.
Cooking
Heat 1tbsp olive oil, sauté the onion, carrot, tomato until soft.
Add lentils and the spices, continue to sauté.
Add 500ml vegetable broth, bring to a boil, then reduce heat and simmer for 40 minutes.
After 40 minutes, if the lentils are soft, add the chopped kale and 200ml water, cook on medium low heat for 5-10 minutes.
Season with salt and pepper to taste.
Turn off the heat, add 1tbsp lemon juice.
