Ingredients
Condiments: ½ onion, 2 scallions, 3 garlic cloves, 1 ginger, 2 tsp Korean soy sauce, 1 tsp chili sauce, 1 tsp Korean chili powder, ½ tsp brown sugar
100 g soft or silk tofu
70 g enoki mushrooms
320 g fermented kimchi
350 ml of water or vegetable broth
60 ml kimchi brine
1.5 tbsp cooking oil
Steps
Preparing
Sliced onion.
Finely chop the green onions, keeping the white tops and green stems separate.
Mince the garlic and ginger.
Chop kimchi into bite-sized pieces.
Cut the tofu/sub into 3 x 3 cm pieces, 0.7-1 cm thick.
Cut off the legs of the enoki mushrooms, clean (soak in diluted salt water for about 5 minutes).
Cooking
Turn on the stove on high heat, saute garlic and ginger with 1.5 tc cooking oil.
Add the onion and the white head of the green onion and stir-fry together.
When the onion starts to smell and turn slightly transparent, add the kimchi (leave of the kimchi juice) to the island for about 5 minutes.
When kimchi starts to thicken, add water/vegetable broth. Add 2 tbsp Korean soy sauce + 1 tbs chili sauce + 1 tcf Korean chili powder + ½ tcf brown sugar, stir until dissolved and bring to a boil.
When the soup boils, gently put the sliced tofu/subs into the soup, add the enoki mushrooms.
Cover, reduce heat, simmer for 15 minutes (see note).
After 15 minutes, open the lid and season to taste, add the sliced green onion stem to the soup, turn off the heat.
*Note
Kimchi that is kept for a long time and sour is suitable for cooking soup, the soup will be more delicious.
Depending on how thin you cut, tofu when stewed in soup will infuse faster or slower. I like to eat soaked beans, so I usually cut 0.7 cm. If you want to eat soft beans, smothered and soaked in the soup, you can stew for longer than 15 minutes.
Korean soy sauce makes the salty taste, Korean chili sauce makes the soup spicy. Korean chili powder does not have a very spicy taste but still has the pungent smell of chili and gives a brilliant red color to the soup. Sugar helps to neutralize the salty, spicy and sour taste. You can increase or decrease these ingredients according to your taste.
