Ingredients
1 can young jackfruit in water
4 eggs
1 shallot
3 cloves garlic
1 star anise
Coconut water
Dark soy sauce
Regular Soy sauce
Steps
Prepare
Dried onion, minced garlic
Young jackfruit open the box, drain the water, wash it. Marinate the young jackfruit with 1 tbsp soy sauce, 1 tbsp black soy sauce, 1 tbs minced onion and garlic. Mix well so that the jackfruit infuses the spices for 10-15 minutes
Making
Hard-boiled eggs, lightly fried with oil for a tough crust
Fry the minced onion, garlic and star anise on the stove over medium heat with 1 tbsp of oil. Put the jackfruit in a pan on both sides on medium heat (keep the soaked soy sauce for later).
When the jackfruit is almost cooked, put the marinated soy sauce in the jackfruit and fried eggs in the pot. Add coconut water to cover the surface of the ingredients. Boil
When boiling, cover the pot and reduce the heat to low. Leave to braise for 30 minutes.
The dish is completed after 30 minutes of braising, when opening the pot, the water is almost exhausted, the jackfruit is soft, the spices are absorbed into the jackfruit and the eggs are very tasty*
Note
After 30 minutes, if you open the lid and see that the water has not dried up, then turn up the heat to boil the water slightly, the stock will be condensed, not too much water like cooking, the food will be more delicious.
Sticking the boiled, peeled and fried eggs before storage helps the white part to be tough, when the stock soaks up the spices, it's delicious. It takes a bit of work, but if you don't like the chewy texture of the whites, skip the frying step.
